How to make healthy garlic mayonnaise
This is a seriously easy to make aioli, I found it in the revive cookbook. There is no getting away with the fat content, but you can get rid of the sugar, stabilisers, egg and any other additives you find in the shop bought stuff. This will keep in the fridge for a month. You can thin it down with warm water to make a dressing.
Make sure all the ingredients are at room temperature.
- ½ cup soy or rice milk
- 1 tbsp cider vinegar – I use a naturally fermented brand with natural honey
- 3 cloves of garlic crushed, pressed or chopped
- ½ tsp salt
- 2 cups of rice bran oil
Simply put everything except the oil into the food processor, whilst the machine is running slowly add the oil. DONE
You can use a stick blender if you do not have a processor, but I usually have to get help with pouring in the oil. If you make a mistake and add the oil too quickly and or the ingredients are not all the same temperature, the mix might split. You can usually rescue this sometimes by pouring in some warm water while the machine is running.
